Super Cool Superfood Pancakes
If you want to keep up with the biggest trends both fashion and food wise, then you must know that superfoods are in. And the best part is, they are not dull at all! Today I will present to you the best way to combine two of the best superfoods (blue majik and flaxseed) into one perfect pancake recipe. Are you ready?
What is blue majik and can it be incorporated in pancake batters?
Blue majik is actually derived from spirulina, a blue-green colored algae highly appreciated for its health properties. This magical ingredient is full of vitamins (mostly vitamin B12), enzymes and minerals (calcium, potassium, magnesium, niacin, iron). The it is called blue, lies in C-phycocyanin. This protein is rich in amino acids, antioxidants with anti-inflammatory properties and many health-promoting features.
Now, wouldn’t it be great if you could make pancakes with this magical ingredient? Well, to answer the question, unfortunately, blue majik cannot be incorporated in pancake batters, but as you will see below, it can be used to make your pancakes way more interesting than the regular ones.
What is flaxseed and can it be incorporated into pancake batters?
Another hit among health-conscious people, flaxseed boasts many health-promoting features. Not only is flaxseed rich in fiber (both soluble and insoluble), but it contains Omega-3 essential fatty acids. In fact, a tablespoon of ground flaxseed contains 1.8 grams of these good-for-your-heart acids. The last thing that qualifies flaxseed as a superfood is the fact that it contains 75 to 800 times more lignans than other plant foods. These are compounds that have plant estrogen and antioxidant qualities and are said to prevent some forms of cancer (endometrial and ovarian for example).
Flaxseed and blue majik pancake recipe
If you are a vegan, or if you have ever prepared pancake recipes for a vegan friend, then you know that flaxseed can be used to prepare a vegan egg. So, go ahead and find a favorite among the many different pancake recipes and replace the eggs (if it calls for eggs) with a flaxseed egg.
Flaxseed egg
To prepare one egg you will need 3 tablespoons of water, a tablespoon of ground flaxseed and a medium large bowl. The important thing to remember is you should measure the flaxseed after grinding. Stir everything well and place the bowl in the fridge for around 15 minutes to set. Adjust the amount of ingredients depending on the number of eggs you were to use for your pancakes.
Blue majik frosting
As I have already said, you cannot incorporate blue majik into your pancake recipe. But you can, however, prepare a frosting to cover your pancakes with. You will need:
- 1/4 cup of nut butter
- 4 tablespoons of maple syrup
- 1 teaspoon of vanilla bean
- 4 tablespoons of raw coconut butter
- 4 capsules of blue majik
Place the ingredients in a medium-large microwave-proof container and stir well to combine them. Place the container in the microwave and heat for around 15 seconds, or until everything is completely melted. Finally, place the frosting in the refrigerator for 60 minutes so that it can set.
