As the days grow shorter and cooler, pumpkins take center stage as the quintessential symbol of the season, marking the transition from summer into autumn. The highly anticipated return of this unique vegetable to stores and carved into jack-o’-lanterns on front porches can only mean one thing: autumn is here and it is pumpkin recipe season!

From pumpkin spice lattes to hearty soups and baked goods, pumpkins are loved for their rich flavor and nutritional benefits.

We love the fall season and everything that goes with it: cozy sweaters, trips to the local pumpkin patch and, of course, pie.

Pumpkin Spice Latte

We are kicking the list off with a version of this hugely popular fall beverage.

Ingredients

  • 2 cups milk of choice
  • 2 tablespoons canned pumpkin puree
  • 2 tablespoons sugar
  • 1/2 teaspoon pumpkin spice blend
  • 1/2 cup strong brewed coffee or espresso
  • Whipped cream (optional)
  • Cinnamon stick (optional)

Instructions

  • In a saucepan, combine milk, pumpkin puree and sugar.
  • Whisk until well blended and heated through, but do not boil.
  • Remove from heat and stir in pumpkin spice blend.
  • Pour coffee into a mug and add the pumpkin spice mixture.
  • Top with whipped cream and a cinnamon stick if desired.

Pumpkin Soup

A bowl of creamy pumpkin soup is the epitome of autumn comfort food.

Ingredients

  • 1 medium pumpkin, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1/2 cup coconut milk or cream

Instructions

  • In a large pot, sauté onion and garlic.
  • Add pumpkin, broth and spices. Simmer until pumpkin is tender.
  • Blend soup until smooth.
  • Stir in coconut milk/cream.
  • Season with salt and pepper to taste.

Classic Pumpkin Pie

No autumn recipe lineup is complete without a pumpkin pie.

Ingredients

  • 1 unbaked pie crust
  • 1 15 oz can pumpkin puree
  • 1 14 oz can sweetened condensed milk
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  • Preheat oven to 425°F.
  • Mix pumpkin, condensed milk, eggs and spices.
  • Pour into pie crust.
  • Bake for 15 minutes, then reduce heat to 350°F and bake 35-40 minutes more.
  • Cool completely before serving.

Pumpkin Bread

For a grab-and-go treat, bake pumpkin muffins or bread. These make for perfect autumn snacks or breakfasts.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/3 cup water
  • 1 cup sugar
  • 1 cup canned pumpkin puree
  • 2 eggs

Instructions

  • Preheat oven to 350°F. Grease a 9×5 inch loaf pan.
  • Mix dry ingredients in one bowl.
  • In another bowl, beat water, sugar, pumpkin and eggs.
  • Stir wet ingredients into dry until just blended.
  • Pour into pan and bake for 60-65 minutes.

Pumpkin Spice Cookies

Pumpkin spice cookies are a delightful autumn treat, combining the warm flavors of pumpkin and spices into a soft, chewy cookie. These cookies are perfect for celebrating the fall season, whether enjoyed with a warm drink or shared at get-togethers. Try dunking one in a pumpkin spice latte for the ultimate seasonal indulgence.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 cup canned pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F.
  • Whisk together flour, baking powder, baking soda, spices and salt.
  • In another bowl, cream butter and sugars. Beat in pumpkin, egg and vanilla.
  • Gradually mix in dry ingredients.
  • Drop by rounded tablespoons onto baking sheets.
  • Bake for 15-20 minutes until lightly browned.
