Persica Rising is a peach saison that debuted during the restaurant’s July 4th Beer-B-Q Battle. A saison is a highly carbonated, fruity and spicy pale ale around 7 percent alcohol by volume. In this case, it is 6 percent alcohol.
Dave Donaldson, City Tap House’s beverage director, collaborated with 3 Stars lead brewer Nathan Rice and owners Mike McGarvey and Dave Coleman to create the exclusive house beer. Donaldson will also work with 3 Stars to create variations of Persica Rising, including souring, barrel aging and infusing with seasonal ingredients.

“We leaped at the opportunity to create a house brew with 3 Stars,” Donaldson said. “I’ve been a strong supporter of their beer since they began distributing, and they’ve been great friends and supporters of City Tap House since we opened in 2013. We’re all thrilled with the result and our guests have been equally enthusiastic.”
Persica Rising is a dry, crisp Saison with a mild hop bite and a subtle peach finish. I’m by no means a beer connoisseur, but I found the beer a bit hoppy for my liking, and I couldn’t really taste the peach. However, drinkers on the https://untappd.com/b/3-stars-brewing-company-persica-rising/1147732 Untappd social drinking website have given the beer 3.5 of five bottlecaps.
Persica Rising is available for $6 per 10-ounce draft and $5 per draft during happy hour or $3.50 for a 4.5-ounce sample.
