Polish Sausage, Sauerkraut & Potatoes

Ingredients
- 6 medium gold potatoes cut into large chunks
- 16 ounces sauerkraut, drained
- 1 1/2 Polish sausage sliced
- 1/2 cup chicken broth
- 1 teaspoon caraway seeds
- 1 bay leaf
- Salt and pepper to taste
Directions
- Place the sauerkraut at the bottom of a crockpot. Add the potato chunks on top, followed by the sliced Polish sausage.
- In a bowl, combine chicken broth, caraway seeds and bay leaf. Pour this mixture over the contents of the crockpot.
- Sprinkle salt and pepper over the ingredients, adjusting to taste.
- Cover and cook on high for 4 hours or low for 7-8 hours, until potatoes are tender and flavors meld.
- Remove the bay leaf, stir the dish, and serve hot, ensuring each portion includes sausage, potatoes and sauerkraut.
Variations
- For a vegetarian version, substitute sausage with plant-based options and use vegetable broth. The sauerkraut and caraway seeds will still provide that classic flavor.
- For a little heat, use spicy Polish sausage or add red pepper flakes to the dish.
- Experiment with sweet potatoes or red potatoes for a different texture and flavor.
- Add bell peppers, onions, or carrots to the crockpot for additional flavors and a more colorful dish.
